    Prepare ingredients

    If using frozen blueberries, thaw briefly at room temperature or rinse under warm water and drain. Measure out sugar, lemon juice, lemon zest, salt, and vanilla. In a small bowl, whisk the cornstarch with 1 tablespoon cold water until dissolved to make a slurry.

    Combine base ingredients

    In a medium saucepan, combine 2 cups blueberries, 2 tablespoons water, 1/4 cup granulated sugar, 1 tablespoon lemon juice, 1/2 teaspoon lemon zest, and 1/8 teaspoon salt. Stir to combine.

    Cook and thicken

    Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally. After 3–4 minutes the berries will start to break down and release juice.

    Add slurry

    Stir the cornstarch slurry once more and pour it into the simmering blueberry mixture while stirring constantly. Continue cooking and stirring for 1–2 minutes until the topping thickens to a spoon-coating consistency. If you prefer a chunkier topping, cook less; for smoother, break down the berries with the back of a spoon or a potato masher.

    Finish and cool

    Remove the pan from heat. Stir in 1/4 teaspoon vanilla extract and 1 teaspoon butter (if using) until melted and incorporated. Taste and adjust sweetness or lemon if needed. Let the topping cool for 10–15 minutes; it will thicken further as it cools.

    Store or serve

    Use warm or chilled over pancakes, waffles, yogurt, ice cream, or cheesecake. Store any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat gently on the stove or microwave, adding a splash of water if it becomes too thick.
