Prepare apples
Wash the apples thoroughly under running water to remove any wax or residue. Core the apples and cut them into quarters. Peeling is optional — leaving the skin on adds nutrients and color but can slightly increase sediment.

Blend apples
Place the apple pieces in a high-speed blender. Add 1 cup cold water, 1 tablespoon fresh lemon juice, and 1 teaspoon granulated sugar. Blend on high for 45–60 seconds until the mixture is very smooth and pulpy.

Strain juice
Place a fine-mesh sieve or nut milk bag over a large bowl or pitcher. Pour the blended apple mixture through the sieve or bag. Use a spoon to press the pulp against the sieve, or squeeze the bag, to extract as much liquid as possible. Discard or reserve the leftover pulp for baking or smoothies.

Chill and taste
Taste the strained juice. If it needs brightening, add up to another 1/2 tablespoon lemon juice. If you prefer sweeter juice, dissolve an additional 1/2–1 teaspoon sugar into a small amount of warm water and stir into the juice. Refrigerate until cold, or serve immediately over ice cubes if desired.
