Method

Prepare the Broth

    Sauté Aromatics

    In a large pot over medium heat, add the sesame oil. Once hot, add the minced garlic and grated ginger. Sauté for about 1-2 minutes until fragrant.

    Add Vegetables

    Add the sliced mushrooms, julienned carrots, and chopped green onions to the pot. Stir and cook for about 3-4 minutes until the vegetables start to soften.

    Combine with Broth

    Pour in the vegetable broth and soy sauce. Bring the mixture to a boil. Reduce to a simmer and let it cook for about 10 minutes.

    Add Leafy Greens

    Add the spinach or bok choy to the broth and let it wilt for another 2-3 minutes.

Cook the Noodles

    Boil Noodles

    In a separate pot, cook the ramen noodles according to package instructions. Usually, this takes about 3-4 minutes. Drain and set aside.

Assemble the Ramen

    Combine Noodles and Broth

    In serving bowls, divide the cooked ramen noodles evenly. Ladle the hot vegetable broth and vegetables over the noodles.

    Add Toppings

    Top each bowl with cubed tofu, a soft-boiled egg, nori strips, and sprinkle sesame seeds on top.
