Method

Prep the Seafood

    Cook the Shrimp

    In a saucepan, bring water to a boil. Add the shrimp and cook for about 2-3 minutes or until they turn pink and opaque. Drain and let cool.

    Mix Seafood Filling

    In a bowl, combine the cooked shrimp, crab meat, fish sauce, and sesame oil. Mix well and set aside.

Prepare the Vegetables

    Julienne the Vegetables

    Using a knife, julienne the carrot, cucumber, and red bell pepper. Make sure they are cut into thin strips for easy wrapping.

    Prepare the Lettuce and Cilantro

    Shred the lettuce leaves and chop the fresh cilantro. Set all the vegetables aside for assembly.

Assemble the Spring Rolls

    Soften Rice Paper Wrappers

    Fill a large shallow dish with warm water. Dip one rice paper wrapper into the warm water for about 10-15 seconds until it becomes soft and pliable. Remove and let excess water drip off.

    Fill and Roll

    Place a small amount of the seafood filling, followed by a mix of the prepared vegetables, and a sprinkle of cilantro in the center of the softened wrapper. Fold the sides over the filling and then roll it tightly from the bottom up to enclose the filling completely.

    Repeat

    Repeat the process with the remaining rice paper wrappers and filling until all are assembled.

Make the Dipping Sauce

    Combine Sauce Ingredients

    In a small bowl, mix together the peanut butter, soy sauce, lime juice, water, and chili sauce until smooth. Adjust the consistency by adding more water if needed.
