Combine ingredients
In a cocktail shaker filled with ice, pour 2 oz St. Augustine New World gin, 0.75 oz Rhum Clément, 1.5 oz house-made horchata, 0.5 oz fresh lemon juice, and 0.25 oz fresh lime juice. If your horchata is not very sweet, add 0.25 oz orgeat or almond simple syrup. Add one light dash of aromatic bitters if desired.

Shake
Shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosted. The vigorous shake helps to aerate the horchata and integrate the dairy-like texture.

Prepare glass and ice
Discard ice water from the chilled coupe (if used). Fill the chilled coupé with fine shaved ice, mounded slightly above the rim to create a cold bed for the liquid.

Strain
Double-strain the shaken cocktail through a fine mesh strainer into the coupe, pouring gently over the shaved ice so the liquid sinks into and around the ice rather than melting it immediately.
