    Crack the 4 large eggs into a medium bowl. Add the 2 tablespoons whole milk, 1 teaspoon salt, and 1/2 teaspoon black pepper. Whisk briefly just to combine whites and yolks—do not fully aerate; you want a uniform mixture with visible yolk streaks to achieve the 'broken-yolk' texture.

    Place a nonstick skillet over medium-low heat. Add 1 teaspoon vegetable oil and swirl to coat. The lower heat helps create a tender, slightly custardy egg set while allowing some yolk interruption when you pour hot water.

    Pour the egg mixture into the warm skillet, letting it spread into an even layer. Let it sit undisturbed for 30–45 seconds until the edges begin to set but the center is still glossy.

    Broken-yolk technique

    Carefully pour 2 tablespoons of hot (near-boiling) water in a thin stream around the inside edge of the skillet so it contacts the eggs' underside; the steam and heat will partially cook and create delicate breaks and ribbons in the yolk portions, producing the 'broken-yolk' appearance and texture. Cover the skillet immediately with a lid for 20–30 seconds to finish setting while preserving moistness.

    Remove the lid and use a spatula to gently fold or cut the egg mass into two sandwich-sized portions.
