Ice Cream Base Preparation

    Combine Ingredients

    In a medium saucepan, whisk together the heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt over medium heat until the sugar is dissolved and the mixture is hot but not boiling.

    Prepare Egg Yolks

    In a separate bowl, whisk the egg yolks until they are smooth. Gradually pour about 1 cup of the hot cream mixture into the egg yolks while whisking constantly to temper them.

    Cook Custard

    Pour the tempered egg yolk mixture back into the saucepan with the remaining cream mixture. Cook over medium heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon (about 5-7 minutes). Do not let it boil.

    Cool the Mixture

    Remove from heat and strain the custard through a fine-mesh sieve into a clean bowl. Allow to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

Flavoring the Ice Cream

    Once the custard has chilled, divide it into three equal portions. Leave one portion as is for the vanilla flavor.

    To one portion, add cocoa powder and stir until fully combined. This will be your chocolate layer.

    To another portion, add chopped pistachios, almond extract, and green food coloring. Mix until the color is uniform and the pistachios are evenly distributed.

    To the last portion, fold in chopped maraschino cherries and red food coloring. Mix gently to preserve the cherry pieces.

Freezing the Ice Cream

    In a loaf pan or ice cream container, pour the vanilla layer first, spreading it evenly. Follow with the chocolate layer, and then the pistachio layer, smoothing each layer before adding the next.
