Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, baking powder, and salt.

  3. 3

    Cream Butter and Sugar

In another bowl, beat the softened butter and granulated sugar together until light and fluffy.

  4. 4

    Add Eggs and Flavorings

Add the eggs, lemon zest, lemon juice, and vanilla extract to the butter-sugar mixture and mix until well combined.

  5. 5

    Combine Wet and Dry Ingredients

Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined.

  6. 6

    Bake the Cake

Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  7. 7

    Cool the Cake

Remove the cake from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Limoncello Syrup Preparation

  1. 8

    Prepare the Syrup

In a small saucepan, combine the granulated sugar and water, and bring to a simmer over medium heat. Stir until the sugar has dissolved.

  2. 9

    Add Limoncello

Once the sugar has dissolved, remove from heat and stir in the limoncello liqueur. Allow the syrup to cool.

  3. 10

    Soak the Cake

Once the cake has cooled, poke holes all over the top using a skewer and pour the limoncello syrup evenly over the cake. Let it soak for at least 30 minutes.

Lemon Glaze Preparation

  1. 11

    Mix the Glaze

In a bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth and pourable.

  2. 12

    Glaze the Cake

Drizzle the lemon glaze over the soaked cake, allowing it to drip down the sides.
