Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Using a fork, gradually mix the flour into the eggs until a dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Filling Preparation

    Prepare Meat Filling

    In a skillet over medium heat, add a little oil and sauté the chopped onion and minced garlic until translucent. Add the ground beef, Italian seasoning, salt, and pepper. Cook until the meat is browned. Remove from heat and let it cool before mixing in ricotta and parmesan cheese.

    Prepare Spinach Filling

    In a separate skillet, sauté minced garlic in olive oil until fragrant. Add chopped spinach and cook until wilted. Remove from heat and let it cool before mixing in ricotta, parmesan, nutmeg, salt, and pepper.

Ravioli Assembly

    Roll Out Dough

    Divide the rested dough into four pieces. Roll each piece out as thin as possible using a pasta machine or rolling pin.

    Fill the Ravioli

    Place a teaspoon of meat or spinach filling on one half of the dough. Fold the other half over the filling, pressing down gently to seal. Use a ravioli cutter or knife to cut out individual ravioli.

Cooking

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully drop the ravioli into the boiling water and cook for about 4-5 minutes or until they float to the surface.

    Prepare the Sauce

    In a saucepan, heat olive oil and sauté minced garlic until fragrant. Add crushed tomatoes, Italian seasoning, salt, and pepper. Simmer for 10-15 minutes.

    Serve

    Drain the cooked ravioli and serve with the sauce poured over the top. Garnish with additional parmesan cheese if desired.
