Fish Preparation

    Prepare Cod

    Rinse the cod fillets under cold water and pat them dry with a paper towel.

    Season Cod

    Sprinkle salt and black pepper evenly over the cod fillets. Drizzle lemon juice over them and let sit for 10 minutes.

    Steam Cod

    Place the seasoned cod fillets in a steamer basket. Steam over boiling water for 8-10 minutes until the fish is opaque and flakes easily with a fork.

Smoked Onion Cream Preparation

    Slice Onions

    Thinly slice the onions and set aside.

    Cook Onions

    In a skillet, melt the butter over medium heat. Add the sliced onions and cook for about 15 minutes until they are soft and beginning to caramelize.

    Make Cream

    Add heavy cream and smoked paprika to the skillet with the onions. Stir well and simmer for an additional 5 minutes until the sauce thickens slightly.

Fermented Kumquat Preparation

    Prepare Kumquats

    Wash the kumquats thoroughly and slice them into quarters without removing the seeds.

    Create Brine

    In a saucepan, combine water, salt, and sugar. Bring to a boil until the salt and sugar dissolve completely.

    Ferment Kumquats

    Place the kumquat quarters in a clean jar and pour the brine over them. Seal the jar and let it sit at room temperature for 2-3 days to ferment, then refrigerate.
