Method

Preparing the Ribs

    Season the Ribs

    Preheat your oven to 300°F (150°C). Rub the pork ribs with salt, black pepper, and dry rub seasoning evenly on both sides.

    Cook the Ribs

    Place the ribs on a baking sheet lined with aluminum foil. Cover tightly with foil and bake for 2.5 to 3 hours, until tender.

    Apply Barbecue Sauce

    If you prefer wet ribs, remove the foil in the last 30 minutes of cooking and brush barbecue sauce over the ribs. Return to the oven uncovered to caramelize the sauce.

Making the Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the potatoes into quarters. Place them in a large pot and cover with cold water.

    Boil the Potatoes

    Bring the water to a boil over high heat. Reduce to a simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, minced garlic, salt, and black pepper. Mash until smooth and creamy.

Making the Gravy

    Prepare the Roux

    In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 2 minutes until lightly golden.

    Add the Broth

    Slowly add the chicken broth while whisking continuously to avoid lumps. Cook for another 3-5 minutes until thickened.

    Season the Gravy

    Taste the gravy and add salt and black pepper to your preference. Stir well and keep warm until serving.
