    Prepare the Sausage

    In a large pot over medium heat, add the andouille sausage. Cook for about 5 minutes until browned. Remove from the pot and set aside.

    Sauté Vegetables

    In the same pot, add the diced green bell pepper, onion, celery, and minced garlic. Sauté for about 5-7 minutes until the vegetables are tender.

    Combine Ingredients

    Add the browned sausage back to the pot along with the canned diced tomatoes, chicken broth, bay leaves, Cajun seasoning, thyme, salt, and black pepper. Stir well to combine.

    Simmer the Gumbo

    Bring the mixture to a boil, then reduce heat to low and let it simmer for about 30 minutes, stirring occasionally.

    Add Seafood

    After 30 minutes of simmering, add the shrimp and crab meat to the pot. Stir gently and cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.

    Serve

    Remove bay leaves, taste for seasoning, and adjust if necessary. Serve hot over Charleston rice.
