Broth Preparation

    Make the Seaweed Broth

    In a large pot, combine the dried seaweed (kombu) and water. Let it soak for about 30 minutes.

    Heat the Broth

    After soaking, place the pot over medium heat and bring the mixture to a simmer. Add the soy sauce, mirin, sliced ginger, and crushed garlic. Simmer for 10 minutes, then strain the broth to remove the solids.

Cabbage Preparation

    Sauté the Cabbage

    In a large skillet, heat olive oil over medium-high heat. Add the chopped napa cabbage, smoked paprika, salt, and black pepper. Stir-fry for about 5-7 minutes, or until the cabbage is tender and slightly caramelized.

Chicken Skin Preparation

    Prepare the Chicken Skin

    Preheat your oven to 200°C (400°F). Lay the chicken skin on a baking sheet lined with parchment paper. Season with salt and black pepper. Bake for 15-20 minutes, or until crispy and golden brown. Remove from the oven and let cool.

Assembly

    Serve the Dish

    In a serving bowl, ladle the seaweed broth. Add the sautéed cabbage on top and garnish with crispy chicken skin. Serve immediately.
