Marinate the Chicken
In a large bowl, combine the buttermilk, Cajun seasoning, salt, and black pepper. Add the chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Coating
In a separate bowl, mix the all-purpose flour with additional Cajun seasoning, salt, and black pepper. This will be used to coat the chicken.

Fry the Chicken
Heat the vegetable oil in a deep pan over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off, and dredge each piece in the seasoned flour. Fry the chicken in batches until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.

Prepare the Slaw
In a large bowl, combine the shredded cabbage and grated carrot. In a separate bowl, mix the mayonnaise, Cajun seasoning, apple cider vinegar, salt, and black pepper. Pour the dressing over the cabbage mixture and toss well to combine. Refrigerate until ready to serve.

Make the Sauce
In a small bowl, whisk together the mayonnaise, honey, hot sauce, garlic powder, and lemon juice until smooth. Refrigerate until ready to use.

Assemble the Sandwich
To assemble, take a potato bun and layer with a piece of fried chicken, a generous scoop of Cajun slaw, a drizzle of Hunter's sauce, and top with pickle slices. Finish with the top bun and serve immediately.
