Turmeric-Ginger Syrup

    Prepare roots

    Wash the fresh turmeric and ginger roots thoroughly. Peel both roots with the edge of a spoon (or a small peeler) to remove skin. Roughly chop the peeled turmeric and ginger into 1/2- to 1-inch pieces so they release flavor easily.

    Make syrup

    In a small saucepan, combine 1 cup water and 1 cup granulated sugar (or honey). Add the chopped turmeric and ginger. Bring mixture to a gentle simmer over medium heat, stirring until the sugar dissolves. Reduce heat to low and simmer for 10 minutes to extract flavors.

    Infuse and finish

    Remove the saucepan from heat and let the mixture steep for an additional 10–15 minutes to strengthen the flavor. Stir in 1 teaspoon freshly ground black pepper (this increases curcumin absorption). Strain the syrup through a fine mesh sieve or cheesecloth into a heatproof container, pressing on solids to extract liquid. Discard solids. Allow the syrup to cool to room temperature, then refrigerate. Yields about 1 cup syrup; keeps 1–2 weeks refrigerated.

    Juice lemons

    Roll the lemons on the counter while pressing down to loosen juices. Cut lemons in half and juice until you have 1 cup (about 4–6 lemons). Strain juice through a fine mesh sieve to remove seeds and excess pulp if desired.

    Assemble lemonade

    In a pitcher, combine 1 cup fresh lemon juice and 3 cups cold water. Add 3 tablespoons of the prepared turmeric-ginger syrup, taste, and adjust sweetness: add more syrup (1 tablespoon at a time) for a sweeter, spicier drink or more water for a milder flavor. Stir well to combine.

    Chill and serve

    Fill glasses with ice cubes. Pour the turmeric ginger lemonade over ice. Garnish with lemon slices and fresh mint leaves, and if you want extra color/flavor, sprinkle a light pinch (about 1/8 to 1/4 tsp) of grated or ground turmeric on top. Serve immediately.
