Make lemon juice
Juice enough lemons to yield 1 cup (about 4–6 medium lemons). Strain through a fine mesh sieve into a measuring cup to remove seeds and excess pulp. Set aside.
Dissolve sugar
In a small heatproof bowl or measuring cup, combine 3 tablespoons granulated sugar and 1/4 cup hot water. Stir until sugar is completely dissolved to make a quick simple syrup. Allow to cool 3–5 minutes.
Bruise the mint
Place 3 tablespoons packed fresh mint leaves in the bowl with the cooled syrup. Use the back of a spoon or a muddler to gently bruise the leaves for 20–30 seconds—press just enough to release oils without shredding them.
Combine base
Pour the lemon juice into a 1.5–2 quart pitcher. Add the mint-infused syrup (including the leaves) to the lemon juice and stir to combine. Let the mixture sit at room temperature for 10–15 minutes to allow mint flavor to infuse.
To Finish and Serve
Add 3 cups cold water to the pitcher with the lemon-mint base. Stir and taste. If you'd like a sweeter or more concentrated flavor, stir in up to 2 teaspoons optional simple syrup or extra sugar until dissolved. Adjust water or lemon to reach your preferred balance (for stronger lemonade, reduce water).
Fill glasses with ice (about 1/3–1/2 full). Strain the lemonade into glasses to remove mint leaves, or pour with leaves for rustic presentation (if straining, press gently on leaves in the strainer to extract extra flavor).
