Method
Lavender-Sage Syrup
Combine sugar and water
In a small saucepan, combine 1 cup water and 1 cup granulated sugar. Stir to combine but do not heat yet.
Add aromatics
Add 2 tablespoons dried culinary lavender, 8 fresh sage leaves (lightly bruised with the back of a spoon to release oils), and 1 tablespoon lemon zest to the saucepan.
Cool and strain
Remove the saucepan from heat and allow the syrup to cool for 15–20 minutes so the flavors continue to infuse. Strain the syrup through a fine-mesh sieve or cheesecloth into a heatproof container, pressing gently on solids to extract liquid. Discard solids. If you prefer a clearer syrup, strain a second time.
Chill
Refrigerate the syrup until fully chilled (about 30 minutes) or use at room temperature if making lemonade immediately. This recipe yields roughly 1 cup of syrup; adjust amount used per glass to taste.

Juice lemons
If you haven't already, juice enough lemons to yield 1 cup (about 4–6 lemons depending on size). Strain seeds and excessive pulp for a smoother drink.
Mix base
In a large pitcher, combine 1 cup freshly squeezed lemon juice, 3 cups cold water, and 3 tablespoons lavender-sage syrup. Stir well and taste.
Adjust sweetness and flavor
If you prefer sweeter lemonade or more herbaceous flavor, add additional syrup 1 teaspoon at a time until desired balance is reached (typical range 2–6 tablespoons per pitcher). If too sweet, add a splash more water or a little extra lemon juice.
Serve
Fill glasses with ice (about 1/2 cup per glass). Pour the lavender sage lemonade over the ice and stir once to chill and combine.
