Soak and Cook Chickpeas

Quick Soak (preferred for dried chickpeas)
Rinse the dried chickpeas thoroughly. Place them in a large bowl and cover with cold water by at least 3 inches. Add 1 tsp baking soda, stir, and let soak overnight (8–12 hours). If short on time, use the quick soak: put chickpeas and baking soda in a pot, cover with the listed 6 cups water, bring to a rolling boil for 2 minutes, then remove from heat and let sit, covered, for 1 hour. Drain and rinse after soaking.

After soaking, transfer chickpeas to a large pot and cover with fresh water by about 2 inches. Bring to a gentle boil, skim any foam, then reduce to a simmer. Cook until very tender and mash easily between fingers — typically 45–90 minutes depending on chickpea age. For creamier hummus, cook until the skins begin to separate and chickpeas are falling apart. Reserve about 1/2–3/4 cup of the cooking liquid (aquafaba) and drain the rest.

Add the peeled garlic cloves and 1/2 tsp of the salt to the tahini-lemon mix. Pulse to mince the garlic, then scrape down the sides.

With the processor running, slowly drizzle in the 2 tablespoons of olive oil and the cold 1/4 cup water. This helps create a creamy emulsion. Add the ground cumin and process until smooth, about 30 seconds.
Combine Chickpeas and Emulsion

Add about two-thirds of the cooked chickpeas to the food processor and process until mostly smooth, scraping down the sides as needed. Add remaining chickpeas and continue to process until very smooth. For an ultra-silky texture, process longer and add small amounts (1–2 tablespoons) of reserved cooking liquid or additional cold water to reach desired consistency.

Plate and Garnish

Spoon the hummus into a shallow serving bowl and use the back of the spoon to create a shallow well in the center.

Drizzle the 1 tablespoon of extra-virgin olive oil over the hummus, sprinkle smoked paprika or sumac, add a few whole cooked chickpeas and chopped parsley for color.

Serve immediately with pita, fresh vegetables, or store in an airtight container in the refrigerator for up to 4–5 days. The flavors often improve after a few hours.
