Mushroom Shawarma Filling

Sauce (Garlic-Tahini Yogurt)

    Clean and slice mushrooms

    Wipe mushrooms with a damp cloth or rinse briefly and pat dry. Slice mushrooms into 1/4-inch (6 mm) thick slices or roughly chop into bite-sized pieces for a shredded texture.

    Mince garlic and herbs

    Mince 3 cloves of garlic for the filling and 1 clove for the sauce. Finely chop the parsley for finishing.

    If using pickled red onion, have it ready. Slice cucumber and dice tomato. Warm the flatbreads briefly in a dry skillet or oven.

Make the Garlic-Tahini Yogurt Sauce

    Combine 1 cup yogurt, 2 tsp tahini, 1 tbsp lemon juice, 1 minced garlic clove, 1 tsp olive oil and 1/2 tsp salt in a bowl. Whisk until smooth. Add 1 tbsp water if needed to reach drizzling consistency. Taste and adjust salt or lemon.

Cook the Mushroom Shawarma

    Heat a large skillet or cast-iron pan over medium-high heat. Add 2 tbs olive oil and swirl to coat.

    Add the sliced mushrooms in a single layer (work in batches if necessary to avoid steaming). Let them sit without stirring for 2 minutes to develop color, then stir and continue to cook until most moisture evaporates and mushrooms are golden-brown, about 6–8 minutes total.

    Add the minced garlic and cook 30–45 seconds until fragrant, stirring so it doesn’t burn.

    Stir in spices: 1.5 tsp ground cumin, 1 tsp ground coriander, 1 tsp smoked paprika, 1/2 tsp turmeric, 1/4 tsp cinnamon, and 1/4 tsp allspice. Cook 30–60 seconds to toast the spices and coat the mushrooms.

    Deglaze the pan with 1 tbsp red wine vinegar or lemon juice and 1 tbsp soy sauce, scraping any brown bits. Add 1 tsp maple syrup or honey, 1 tsp salt, and 1/2 tsp black pepper. Continue to cook 1–2 minutes so flavors meld and excess liquid evaporates.

    Turn off heat and stir in 1 tbsp fresh lemon juice and the chopped fresh parsley (about 3 tbs). Taste and adjust seasoning with more salt, pepper, or lemon if needed.

Assemble Shawarma Wraps

    Warm 4 flatbreads or pitas until pliable. Spread 2–3 tbs of the garlic-tahini yogurt sauce down the center of each flatbread.

    Portion the cooked mushroom shawarma evenly among the breads (about 125 g mushrooms per wrap).

    Top with pickled red onion, cucumber, tomato, and a handful (about 2 tbs) of fresh cilantro or parsley. Drizzle additional sauce and add hot sauce if using.

    Fold or roll the flatbread to enclose the filling. If desired, toast the assembled wrap seam-side down in a skillet for 1–2 minutes to seal and warm, pressing gently.

Serve

    Cut wraps in half and serve immediately with extra yogurt sauce and lemon wedges on the side.
