For the lemonade base

Method

For the lemonade base

  1. 1

    Make simple syrup

Combine 3 tablespoons granulated sugar and 1 cup hot water in a heatproof container. Stir until sugar is completely dissolved to make a light simple syrup. Let cool to room temperature (about 10 minutes).

  2. 2

Juice fresh lemons until you have 1 cup (about 4–6 lemons depending on size). Strain seeds and pulp through a fine mesh if you prefer a clear drink.

  3. 3

In a large pitcher, combine the cooled simple syrup, 1 cup fresh lemon juice, and 3 cups cold water. Stir to combine and taste; adjust sweetness by adding up to 1 tablespoon more sugar dissolved in a little water if desired.

For the cucumber-jalapeño purée

  1. 4

Prepare cucumber and jalapeño: peel the cucumber if you want a smoother texture, then roughly chop. For milder heat, remove seeds and white rib from the jalapeño; keep seeds if you want more heat.

  2. 5

In a blender, add 1 cup chopped cucumber, 1/2 jalapeño, and 1/2 cup ice. Blend on high until very smooth (about 30–45 seconds). If the mixture is too thick, add 1–2 tablespoons cold water to help blending.

  3. 6

Taste the purée for heat. If it’s too spicy, add more cucumber; if too mild, add a small additional pinch of chopped jalapeño and re-blend.

  4. 7

Strain the purée through a fine mesh sieve into a bowl or measuring cup, using the back of a spoon to press out liquid. This yields about 3/4 to 1 cup of cucumber-jalapeño juice depending on cucumber water content.

  5. 8

Stir 1/4 teaspoon salt into the strained purée to brighten flavors.

Finishing & garnish

  1. 9

Combine the purée with the lemonade base: pour the strained cucumber-jalapeño purée into the pitcher with the lemonade. Stir thoroughly and taste. Adjust balance: add more cold water if too intense, or a splash (1–2 tbs) more lemon juice if you want brighter acidity.

  2. 10

Chill: refrigerate the combined lemonade for at least 20 minutes to let flavors meld, or serve immediately over ice for a colder drink.

  3. 11

Serve: fill tall glasses with ice. Pour lemonade through a small fine mesh strainer if you want a very clear drink. Garnish each glass with a cucumber slice, a lemon slice, and a sprig of mint. For extra visual heat, float a thin jalapeño slice on top.

  4. 12

Storage: store leftover lemonade in a sealed pitcher in the refrigerator for up to 48 hours. Stir before serving as separation may occur.
