Preparing the Fries

Cut the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes

Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and will make the fries crispier.

Drain and Dry

After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels to remove as much moisture as possible.

Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can use a thermometer to check the temperature.

Fry in Batches

Carefully add a handful of the dried potato strips into the hot oil. Fry them for about 4-5 minutes, or until golden brown and crispy. Do not overcrowd the pot.

Drain and Season

Using a slotted spoon, remove the fries from the oil and drain them on a plate lined with paper towels. Immediately sprinkle with salt and black pepper to taste.

Layer the Fries

Place a generous portion of fries on a serving platter or individual plates.

Add Toppings

Sprinkle the shredded cheddar cheese and crumbled bacon evenly over the fries. Then, add chopped green onions on top.

Serve with Sour Cream

Serve the pub fries hot with a dollop of sour cream on the side for dipping.
