Prepare the Dough

Make the Pastry Dough

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling

Prepare the Cream Cheese Filling

In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.

Prepare the Fruit Filling

If using fresh fruit, wash and chop them into small pieces. Set aside.

Assemble the Pastries

Roll Out the Dough

Preheat your oven to 375°F (190°C). On a floured surface, roll out the chilled pastry dough to about 1/8 inch thickness.

Cut and Fill the Pastries

Using a pastry cutter or a sharp knife, cut the dough into squares or circles, about 3-4 inches in diameter. Place a dollop of cream cheese filling or a spoonful of fruit filling in the center of each piece. Fold the dough over to create a pocket and pinch the edges to seal.

Bake the Pastries

Prepare for Baking

In a small bowl, whisk together the egg and milk to create an egg wash. Brush the tops of the pastries with the egg wash and sprinkle with granulated sugar.

Place the pastries on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes or until golden brown.
