Burger Preparation
1. Prepare the Onions
Slice the onion into rings. In a skillet, heat olive oil over medium heat. Add the onion rings and cook until they are soft and lightly caramelized, about 10 minutes. Pour in the mead and cook until the liquid has reduced, about 5 more minutes. Remove from heat and set aside.
2. Prepare the Bison Patties
In a mixing bowl, combine the ground bison with salt and black pepper. Form the mixture into 4 equal patties.
3. Grill the Patties
Preheat your grill to medium-high heat. Grill the bison patties for about 4-5 minutes on each side until they reach your desired doneness. During the last minute of cooking, top each patty with a slice of Danish blue cheese and close the grill lid to melt the cheese.
4. Assemble the Burgers
Toast the potato rolls on the grill for about 1-2 minutes. Place each bison patty on the bottom half of the roll. Top with mead-roasted onions, a generous drizzle of white BBQ sauce, and a handful of micro arugula. Close with the top half of the roll.
5. Serve
Serve the White Buffalo Burgers with a side of haus salad or your favorite soup.
