Grill the Sausages
Preheat the grill to medium-high heat. Grill the sausages for about 6-8 minutes, turning occasionally until they are browned and cooked through.

Prepare the Pickled Vegetables
If using store-bought pickled vegetables, drain them. If making house pickled vegetables, slice your choice of vegetables (like carrots, radishes, and cucumbers) and pickle them in vinegar, sugar, and spices for at least an hour before serving.

Mix the Mustards
In a small bowl, combine the yellow mustard and spicy brown mustard. Adjust the ratios to your preference.

Plate the Appetizer
On a large serving platter, arrange the grilled sausages, house pickled vegetables, and bowls of mixed mustards. Drizzle olive oil over the sausages and sprinkle with chopped parsley, salt, and black pepper.
