    Prepare the Spätzle

    In a large bowl, mix the flour, eggs, milk, and salt until a smooth batter forms. It should be thick but pourable.

    Cook the Spätzle

    Bring a large pot of salted water to a boil. Using a Spätzle maker or a colander, push the batter through to form small dumplings into the boiling water. Cook until they float to the surface, about 3-4 minutes. Remove with a slotted spoon and set aside.

    Prepare the Bacon and Onions

    In a skillet, cook the bacon over medium heat until crispy. Remove and set aside. In the bacon fat, add sliced onions and caramelize until golden brown, about 10 minutes.

    Make the Cheese Sauce

    In a saucepan, melt the butter over medium heat. Add the Gruyère cheese and stir until melted and creamy. Season with black pepper and nutmeg to taste.

    Combine Everything

    Mix the cooked Spätzle with the cheese sauce, then add the crispy bacon and caramelized onions. Stir well to combine.
