Cooking Steps

  1. 1

    Prepare the Marinade and Rub

In a small bowl, combine caraway seeds, ground coffee, salt, and black pepper. Rub this mixture all over the beef sirloin. Let it marinate for at least 30 minutes.

  2. 2

    Prepare Huckleberry Aigre Doux

In a small saucepan over medium heat, combine huckleberries and honey. Cook until the huckleberries break down and the mixture thickens slightly, about 10 minutes. Remove from heat and set aside.

  3. 3

    Skewer the Beef

Cut the marinated beef into 1-inch cubes and thread them onto skewers. Ensure to leave space between pieces for even cooking.

  4. 4

    Grill the Skewers

Preheat the grill to medium-high heat. Brush the skewers with olive oil and grill for about 8-10 minutes, turning occasionally, until the beef is cooked to your desired doneness.

  5. 5

    Serve

Remove the skewers from the grill. Serve hot with huckleberry aigre doux drizzled over the top, alongside the puffed wild rice and marinated hot peppers.
