Pork Preparation

    Prepare the Pork

    Rub the pork shoulder with salt, black pepper, smoked paprika, garlic powder, and onion powder. Place in a slow cooker and cook on low for 8 hours or until tender.

    Shred the Pork

    Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix in the South Carolina BBQ sauce to coat the pork.

    Cook the Eggs

    In a skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes for an over-medium egg.

    Assemble the Sandwich

    Toast the sourdough bread slices. On one slice of bread, layer the pulled pork, a slice of smoked cheddar, pickled red onions, and the cooked egg. Top with another slice of bread.

    Serve

    Cut the sandwich in half and serve immediately, optionally with extra BBQ sauce on the side.
