    Prepare the Patties

    Divide the ground beef into 2 equal portions and shape them into patties, about 3/4 inch thick. Season both sides with salt and pepper.

    Cook the Patties

    Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium doneness. During the last minute of cooking, place a slice of American cheese on each patty and cover to melt.

    Cook the Bacon (Optional)

    In a separate skillet, cook the bacon slices until crispy. Drain on paper towels.

    Caramelize the Onions

    In the same skillet used for bacon or a separate one, add thinly sliced onions and cook over medium heat, stirring occasionally, until they are soft and golden brown, about 15-20 minutes.

    Assemble the Burger

    Toast the brioche buns lightly. On the bottom half of each bun, place a cheese-topped patty, followed by caramelized onions, dill pickles, and bacon if desired. Top with the other half of the bun.
