Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices and sprinkle with salt. Let them sit for about 10 minutes to draw out some moisture.

Set Up Breading Stations
In one bowl, place the buttermilk. In a second bowl, mix the flour, cornmeal, cayenne pepper, salt, and black pepper. Dip each tomato slice first in the buttermilk, then in the cornmeal mixture, ensuring they are well coated.

Heat the Oil
In a large skillet, heat the vegetable oil over medium heat until shimmering.

Fry the Tomatoes
Fry the breaded tomato slices in batches, about 3-4 minutes per side, or until golden brown and crispy. Remove and drain on paper towels.
Remoulade Sauce

Combine Ingredients
In a bowl, mix together the mayonnaise, Dijon mustard, chopped capers, minced garlic, lemon juice, hot sauce, and paprika. Season with salt and pepper to taste.

Refrigerate the remoulade sauce for at least 30 minutes before serving to allow the flavors to meld.
