Fried Green Tomatoes

Pimento Cheese

Method

Prepare Fried Green Tomatoes

    Slice and Season Tomatoes

    Slice the green tomatoes into 1/4 inch thick slices. Sprinkle both sides with salt and let them rest for 15 minutes to draw out moisture.

    Prepare Breading Station

    In a shallow bowl, whisk together the flour, cornmeal, salt, and pepper. In another bowl, beat the eggs and milk together.

    Bread Tomato Slices

    Dredge each tomato slice in the flour mixture, dip in the egg mixture, then coat again with the flour mixture.

    Fry Tomatoes

    In a large skillet, heat vegetable oil over medium heat. Fry the tomato slices in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Make Pimento Cheese

    Mix Pimento Cheese

    In a mixing bowl, combine cream cheese, cheddar cheese, pimentos, mayonnaise, garlic powder, onion powder, salt, and black pepper. Mix until well combined and creamy.

Assemble the BLT

    Cook Bacon

    Cook the pecan smoked bacon in a skillet until crispy. Drain on paper towels.

    Toast Bread and Spread Cheese

    Toast the slices of bread until golden brown. Spread a generous amount of pimento cheese on two slices.

    Layer Ingredients

    Layer on the fried green tomatoes, crispy bacon, pickled red onions, and leafy greens. Top with the other slice of bread.

    Cut the sandwich in half and serve immediately.
