Prepare the Dough
In a small bowl, dissolve the yeast and sugar in warm milk. Let it sit for about 5-10 minutes until frothy. In a large bowl, combine flour and salt. Add the yeast mixture and melted butter. Mix until a dough forms.

Knead and Rise
Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape Muffins
Punch down the dough and roll it out to about 1-inch thick. Use a round cutter to cut out muffins. Place them on a cornmeal-dusted baking sheet. Cover and let rise for an additional 30 minutes.

Cook the Muffins
Preheat a skillet over medium heat. Cook the muffins for about 7-10 minutes on each side until golden brown. Let cool before slicing.

Make the Dough
Preheat the oven to 425°F (220°C). In a bowl, mix together flour, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
