Marinate Chicken
In a bowl, combine the boneless chicken thighs with buttermilk. Cover and marinate in the refrigerator for at least 2 hours or overnight.

Prepare Breading
In a separate bowl, mix the flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper.

Fry Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Remove chicken from buttermilk, shake off excess, then dredge in the flour mixture. Fry for about 6-8 minutes on each side until golden brown and cooked through. Place on paper towels to drain.

Make Waffle Batter
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar. In another bowl, mix buttermilk, eggs, and melted butter. Combine wet and dry ingredients until just mixed.

Preheat the waffle iron. Pour batter into the waffle iron and cook according to manufacturer's instructions until golden brown.
