Pulled Pork Preparation

    Cook the Pork

    In a slow cooker, season the pork shoulder with salt, black pepper, onion powder, and garlic powder. Pour barbecue sauce over the pork and cook on low for 8 hours or until tender. Shred the pork with forks and mix it with the sauce.

Biscuit Preparation

    Make the Biscuits

    Preheat the oven to 425°F (220°C). In a bowl, combine flour, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk until a soft dough forms. Drop spoonfuls on a baking sheet and bake for 12-15 minutes or until golden.

Hollandaise Sauce Preparation

    Prepare the Hollandaise

    In a bowl, whisk together egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler). Slowly drizzle in melted butter while whisking continuously until thickened. Season with salt and cayenne pepper.

Egg Poaching

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack eggs into individual bowls, then carefully slide them into the water. Cook for 3-4 minutes, or until whites are set but yolks are still runny. Remove with a slotted spoon.

Hashbrowns Preparation

    Grate potatoes and rinse under cold water. Squeeze out excess moisture. Heat olive oil in a skillet over medium heat. Add grated potatoes, season with salt and pepper, and cook until golden brown and crispy, about 5-7 minutes per side.

Assemble the Dish

    To assemble, place a biscuit on a plate, top with pulled pork, a poached egg, and drizzle with hollandaise sauce. Serve alongside hashbrowns or grits. Add baby kale on top if desired.
