Preparation
- 1
Soak the Rice
Rinse the glutinous rice under cold water until the water runs clear. Then, soak the rice in water for at least 4 hours or preferably overnight.
- 2
Prepare the Coconut Sauce
In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat, stirring until the sugar dissolves. Do not let it boil. Remove from heat and set aside.
- 3
Prepare the Mango
Peel the ripe mangoes and slice them into thin pieces. Set aside.
Cooking
- 4
Cook the Rice
After soaking, drain the rice and place it in a steamer lined with cheesecloth. Steam over boiling water for about 30 minutes or until the rice is tender and translucent.
- 5
Combine Rice and Coconut Sauce
Once the rice is cooked, transfer it to a large bowl and pour 3/4 of the prepared coconut sauce over it. Mix gently and let it sit for about 15 minutes to absorb the flavors.
