Prepare the Beef
Slice the beef sirloin or rib-eye into thin strips, approximately 1/4 inch thick.

Chop Vegetables
Peel and chop the onion, garlic cloves, carrots, and celery into small pieces.

Add Carrots and Celery
Stir in the chopped carrots and celery, cooking for about 5 minutes until they soften slightly.

Add Broth and Beef
Pour in the beef broth, then add the sliced beef, bay leaves, and black peppercorns. Bring to a boil.

Reduce heat to low and let the mixture simmer for about 30-40 minutes, allowing the flavors to meld. Season with salt to taste.

Remove the bay leaves and ladle the beef and broth into bowls.
