Preparing the Broth

Combine Broth Ingredients
In a large pot, combine the water and chicken stock. Bring to a boil over medium-high heat.

Add Seasonings
Once boiling, add soy sauce, miso paste, ginger, minced garlic, sesame oil, and chili oil. Stir well until the miso is fully dissolved.

Simmer
Reduce heat to low and let the broth simmer for 15-20 minutes to allow the flavors to meld.

Prepare Vegetables
Wash and chop the napa cabbage into bite-sized pieces. Slice the mushrooms, carrots (into thin rounds), and chop the green onions.

Prepare Proteins
If not already done, slice beef thinly against the grain and rinse the shrimp to make sure they are clean and deveined.
Serving the Hot Pot

Set Up the Table
Set a portable burner or hot pot on the dining table. Place the prepared broth on the burner and heat it until simmering.

Arrange the vegetables and proteins on platters around the hot pot so everyone can reach them easily.

In a small bowl, mix together soy sauce, chili paste, minced garlic, and lime juice to create a dipping sauce.

Each person can add their choice of ingredients to the simmering broth to cook them to their desired doneness. Serve with the dipping sauce.
