Prepare the Ingredients
Gather all the ingredients. Dice the chicken thighs into bite-sized pieces and set aside.

Chop Vegetables
Slice the carrots, dice the potatoes, slice the mushrooms, and chop the green onions. Mince the garlic and ginger.

Brown the Chicken
Add the diced chicken thighs to the pot and cook until browned on all sides, about 5-7 minutes.

Add Broth and Vegetables
Pour in the chicken broth and bring to a boil. Add the sliced carrots, diced potatoes, and mushrooms to the pot.

Season the Broth
Stir in the soy sauce, salt, and black pepper. Reduce the heat and let the mixture simmer for about 20-25 minutes until the vegetables are tender and the chicken is cooked through.

Just before serving, stir in the chopped green onions. Adjust seasoning if necessary.
