Prepare the beef
Cut the beef chuck roast into 1-inch cubes. Season the cubes with salt and black pepper, ensuring they are evenly coated.

Prepare the aromatics
Mince the garlic cloves and finely chop the fresh ginger. Slice the green onions into small pieces, separating the green parts from the white parts.

Brown the beef
In a large pot, heat some oil over medium-high heat. Add the seasoned beef cubes and brown them on all sides, approximately 5-7 minutes. Remove the beef and set aside.

Simmer the beef
Once the broth is boiling, return the browned beef to the pot. Reduce the heat to low and cover. Allow it to simmer for 1.5 hours until the beef is tender.

Finish with garnishes
Before serving, stir in the sesame oil and adjust seasoning with chili flakes to taste. Garnish with fresh cilantro and the green parts of the sliced green onions.
