Preparation Steps

    Prepare the Quinoa

    Rinse the quinoa under cold water. In a pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes or until all water is absorbed. Fluff with a fork and set aside.

    Cook the Potatoes

    Wash and peel the potatoes. Cut them into cubes and boil in salted water until tender, about 10-15 minutes. Drain and set aside.

    Sauté the Kale and Carrots

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped kale and sliced carrots, sauté until tender, about 5-7 minutes. Season with salt and pepper.

    Prepare the Tofu

    Press the tofu to remove excess moisture, then cut into cubes. Marinate with your choice of spices and a tablespoon of olive oil for about 15 minutes. In a skillet, heat another tablespoon of olive oil over medium-high heat and fry the tofu until golden brown, about 8-10 minutes.

    Fry the Avocado

    Cut the avocado in half, remove the pit, and slice. In a separate pan, heat the remaining tablespoon of olive oil and fry the avocado slices until golden brown, about 2-3 minutes on each side.

    Assemble the Bowl

    In a large bowl, layer the quinoa, sautéed kale and carrots, cooked potatoes, edamame, spring greens, pickled red cabbage, fried tofu, and fried avocado. Drizzle with additional olive oil if desired, and season with salt and pepper to taste.
