    Prepare the Deviled Egg Salad

    Peel the hard-boiled eggs and place them in a bowl. Mash the eggs with a fork.

    Mix Ingredients

    Add mayonnaise, Dijon mustard, salt, black pepper, and chopped chives to the mashed eggs. Mix until well combined.

    Toast the Bread

    Toast the slices of bread in a toaster or on a skillet until golden brown.

    Prepare the Hash Browns

    In a skillet, heat olive oil over medium heat. Add grated potatoes and season with salt and pepper. Cook until crispy and golden, about 5-7 minutes on each side.

    Assemble the Sandwich

    Spread a generous amount of the deviled egg salad on two slices of toasted bread. Top with sliced tomatoes and pickled veggies. Cover with the remaining slices of bread.
