1. Cook the Rice
Rinse jasmine rice under cold water until the water runs clear. In a medium pot, combine 1 cup of jasmine rice with 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for another 5 minutes.
2. Prepare the Eggs
In a small pot, bring water to a boil. Carefully add the eggs and boil for 6-7 minutes for soft-boiled or 9-10 minutes for hard-boiled. Once done, transfer to an ice bath to cool, then peel and slice in half.
3. Assemble the Bowl
In a bowl, layer the cooked jasmine rice at the bottom. Top with spring greens, house pickles, sliced avocado, and the boiled eggs. Drizzle roasted garlic aioli and spicy chili onion crunch on top. Finally, garnish with chopped green onions.
