Prepare the Lemon Juice
Roll the Meyer lemons on a countertop to release their juices. Cut them in half and juice them into a measuring cup, discarding any seeds. You should have about 1 cup of lemon juice.

Make the Simple Syrup
In a small saucepan, combine 1 cup of water and 1 cup of pure cane sugar. Heat over medium heat, stirring occasionally until the sugar has completely dissolved. Remove from heat and let cool.

Combine Ingredients
In a large pitcher, combine the fresh lemon juice, the simple syrup, and 3 cups of cold water. Stir well to combine. Taste and adjust sweetness or tartness by adding more sugar or water as desired.

Serve
Serve the lemonade over ice in glasses. Garnish with lemon slices or mint leaves if desired.
