In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Mix the Wet Ingredients
In a separate bowl, whisk together the buttermilk, egg, melted butter, and green food coloring until smooth.

Combine Wet and Dry Ingredients
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are fine.

Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a little butter. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
