Toast the Brioche
Preheat your oven to 375°F (190°C). Place the brioche slices on a baking sheet and brush them lightly with olive oil on both sides. Toast in the oven for about 10 minutes or until golden brown and crispy.

Prepare the Bruschetta Topping
While the brioche is toasting, dice the cucumber and cherry tomatoes. In a mixing bowl, combine diced cucumber, cherry tomatoes, fresh basil leaves (torn into pieces), salt, and pepper. Drizzle with a little olive oil and mix well.

Assemble the Toast
Once the brioche is toasted, spread a generous layer of cottage cheese on each slice. Top with the cucumber and tomato bruschetta mixture.

Finish & Serve
Drizzle the balsamic reduction over the topped bruschetta. Serve alongside a pile of fresh spring greens drizzled with a bit of olive oil and seasoning, if desired.
