1. Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy, about 6-8 minutes. Drain on paper towels.
2. Toast the Brioche
While the bacon is cooking, toast the brioche slices until golden brown.
3. Prepare the Avocado and Tomato
Slice the avocado in half, remove the pit, and scoop out the flesh. Slice it thinly. Slice the tomato into even rounds.
4. Assemble the Sandwich
On one slice of toasted brioche, layer the crispy bacon, avocado slices, tomato slices, and baby lettuce. Spread roasted garlic aioli on the other slice of brioche and place it on top.
5. Serve
