Preparation Steps

    Prepare the Fries

    Wash and cut the potatoes into fries. Soak in cold water for at least 30 minutes to remove excess starch.

    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove and drain on paper towels.

    Make the Shallot Aioli

    In a small bowl, mix mayonnaise with finely chopped shallots. Set aside.

    Form and Cook the Burger Patty

    Form the ground prime beef into an 8 oz patty. Season with salt and pepper. Grill or pan-fry over medium-high heat for about 4-5 minutes on each side for medium-rare. In the last minute of cooking, place cheddar cheese on top to melt.

    Toast the Bun

    Lightly toast the brioche bun on the grill or in a toaster.

    Assemble the Burger

    Spread the shallot aioli on the bottom half of the bun. Layer with lettuce, the cooked burger with melted cheese, bacon, tomato slice, and tobacco onions. Top with the other half of the bun.

    Fry the Potatoes

    In hot oil, fry the soaked and drained potatoes until golden brown and crispy. Drain on paper towels and season with salt.

    Serve

    Serve the burger with hand-cut fries and house ketchup on the side.
