    Prepare the Mashed Potatoes

    Peel and chop the potatoes into even chunks. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add butter and milk to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Set aside.

    Make the Rosemary Garlic Oil

    In a small saucepan, heat the olive oil over medium heat. Add minced garlic and cook for about 2 minutes until fragrant. Add chopped rosemary and cook for an additional 1-2 minutes. Remove from heat.

    Grill the NY Strip

    Season the NY Strip steak with salt and black pepper. Preheat the grill to high heat. Grill the steak for 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for a few minutes before slicing.

    Plate the mashed potatoes and top with the sliced NY Strip steak. Drizzle with rosemary garlic oil before serving.
