    Prepare the Potatoes

    Wash and dice the potatoes into small cubes. Boil them in salted water until tender, about 10-15 minutes. Drain and set aside.

    Cook the Steak

    Season the NY strip steak with salt and black pepper. Heat a skillet over medium-high heat with 1 tablespoon of olive oil. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for a few minutes before slicing.

    Make the Rosemary Garlic Oil

    In a small saucepan, heat the remaining olive oil over low heat. Add minced garlic and rosemary, cooking gently for about 2-3 minutes until fragrant. Remove from heat and set aside.

    Poach the Eggs

    Bring a pot of water to a simmer and add a splash of vinegar. Crack the eggs into a small bowl and gently slide them into the water. Poach for about 3-4 minutes for runny yolks. Remove with a slotted spoon and set on a paper towel to drain.

    Combine and Serve

    In a serving plate, arrange the diced potatoes, sliced steak, and top with the poached eggs. Drizzle with rosemary garlic oil before serving.
