Crab Cake Preparation

    Make the Crab Cakes

    In a large bowl, combine crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, egg, and breadcrumbs. Season with salt and pepper. Gently mix until combined.

    Form and Chill

    Form the mixture into 8 oz patties and place them on a baking sheet. Chill in the refrigerator for at least 30 minutes.

    Pan-Sear

    Heat olive oil in a skillet over medium heat. Add the crab cakes and cook for 4-5 minutes on each side or until golden brown. Remove from skillet and set aside.

Beets and Mushrooms Preparation

    Prepare the Beets

    Roast the red and golden beets until tender, about 30-40 minutes at 400°F. Let cool, peel, and slice them.

    Sauté the Mushrooms

    In the same skillet, add butter and trumpet mushrooms. Sauté until mushrooms are golden and tender. Season with fresh thyme, salt, and pepper.

Turnip Butter Puree Preparation

    Cook the Turnips

    Peel and chop turnips. Boil in salted water until tender, about 15-20 minutes.

    Make the Puree

    Drain the turnips and blend with heavy cream and butter until smooth. Season with salt and pepper to taste.

Assembly

    Plate the Dish

    On each plate, add a dollop of turnip butter puree, place the crab cake on top, and arrange the roasted beets and sautéed mushrooms around. Serve warm.
