    Prepare the Lamb

    Preheat your grill to medium-high heat. Season the lamb racks with salt, black pepper, and olive oil. Let them sit for about 15 minutes to absorb the seasoning.

    Grill the Lamb

    Place the lamb racks on the grill and cook for about 4-5 minutes per side for medium-rare, or until they reach your desired doneness. Remove from the grill and let rest for 10 minutes before slicing.

    Braised Fennel

    While the lamb is resting, cut the fennel bulbs into quarters. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the fennel and cook until lightly browned (about 5 minutes). Add 1 cup of water, cover, and simmer for 15-20 minutes until tender. Season with salt and thyme.

    Caramelize Cipollini Onions

    In another pan, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat. Add the cipollini onions and cook slowly until they turn golden brown and caramelized (about 15-20 minutes). Stir occasionally to prevent burning.

    Chianti Red Wine Reduction

    In a saucepan, pour the chianti red wine and bring to a boil. Reduce to a simmer and let it reduce by half (approximately 10-15 minutes). Season with salt and pepper to taste.

    On a plate, arrange the sliced grilled lamb racks. Add the braised fennel and caramelized cipollini onions on the side. Drizzle the chianti reduction over the lamb and serve immediately.
